
Our good friend Stephanie (@thisisavocado_ on Instagram) came up with this scrumptious recipe for beer-braised bratwurst, featuring easily-sourceable ingredients and an onion/garlic reduction—not to mention your favorite witbier.
Beer-Braised Bratwurst and Onions

Ingredients
- 1 tbsp neutral oil
- 6 bratwursts
- 2 tbsp butter
- 2 yellow onions, sliced
- 1 garlic clove, microplaned or grated
- Salt, to taste
- Pepper, to taste
- 1 12 oz can of Allagash White
- 1/2 c beef stock
- 1 tsp brown sugar
- 1/4 tsp smoked paprika
- 2-3 sprigs of fresh thyme
To serve:
- Butter toasted hot dog buns or hoagie rolls
- Dijon mustard
Cooking Directions
Heat the oil in a large saucepan over medium-high heat and sear the bratwursts for about 1-2 minutes on each side. Remove them from the pan and set aside.
Lower the heat to medium and melt the butter in the pan. Once melted add the onions, garlic, salt and pepper. Stir until thoroughly combined and cook for 2-3 minutes.
Add the Allagash beer, beef stock and the remaining seasonings and thyme, and bring to a boil. Lower the heat to medium-low, add the bratwurst, cover with a lid and simmer for 10 minutes.
Remove the lid and bring the heat to medium and cook for about 12-15 minutes, or until the sauce has reduced by three quarters and resembles an onion gravy.
Serve the bratwurst and onions on butter toasted buns with dijon mustard and enjoy with an ice cold Allagash beer!
Notes: This bratwurst and onions recipe also pairs well with mashed potatoes!
Store leftover bratwurst and onions in a tightly sealed container in the fridge for up to 3-4 days. To heat leftovers simply microwave them in a microwave-safe container for about 1-2 minutes.
