DESCRIPTION:We brewed a wheat beer and cooled it in our coolship\, inoculating it with local microflora in the process. For a fall-friendly twist\, we added local apples to the coolship and blended the spontaneously fermented beer with our house-made cider before aging it in a concrete fermentor.
