Maine Lobster Mac ‘n’ Cheese Recipe

lobster mac n cheese

Our friends over at Maine Lobster came to us with a delicious recipe for Maine lobster Mac ‘n’ cheese. Naturally, our first inclination was to test it out with a cold bottle of Allagash White. Our resident chef/senior brewer, Sean Ellsworth, whipped up this recipe and it turned out to be just as delicious as it looks on paper (or screen). Plus, we were happy to discover that White’s notes citrus and spice complemented the savory creaminess of the cheese and subtle, briny flavor of the lobster.
You can find the recipe below.

Ingredients

  • 1/2 quart whole milk
  • 1 teaspoon dry mustard
  • 2 bay leaves
  • 2 cloves
  • 4 ounces roux (equal parts flour and butter, cooked together until lightly browned)
  • 2 cups shredded good quality cheddar cheese
  • 1 tablespoon sea salt
  • 2 teaspoons freshly cracked peppercorns
  • 1 pound cooked macaroni
  • 1 pound Maine Lobster meat, chopped

Directions

1) Bring heavy cream to a boil in a medium saucepan.  Reduce and add mustard, bay leaves, cloves and cook 5 minutes on low heat.

2) Remove cloves and bay leaves.  Add roux and cook for an additional 5 minutes, then add cheese, salt, and pepper and whisk until the cheese is melted and well combined.

3) Add macaroni and Maine lobster and place in an ovenproof baking dish and bake for 15 minutes at 375° F.

4) Pair with an Allagash White
