Bijoux

Wild Ale Barrel-Aged on Figs

This jewel of a wild, golden beer sparkles and gleams. We brew it with Vienna malt, Carapils, flaked wheat, two-row barley blend, and hop with Tettnang. After brewing, the beer goes into oak barrels where it ages for eighteen months before we add a blend of Mission and Golden figs and let the beer rest for another four months. After aging, Bijoux displays an aroma of tart fruit and a flavor that conjures up peaches, figs, apricots, and a hint of pie crust.

You’ll find sourness in beer from souring bacteria, from fresh fruit, and sometimes from wild microflora floating in the Maine air.
