What is a Table Beer?
Portland, Maine, has been our home since 1995. Just like when we started, we're an independent brewery striving to make the best Belgian-inspired beers in the world.
We're passionate about living and working in Maine. And in keeping with our Give Where You Live initiative, proceeds from all of our beers help us give back to organizations that make a positive impact on our local community.
We brew Belgian-inspired beers in our Portland, Maine brewery with a dedication to craftsmanship and quality.
Our Coolship beers are crafted using a traditional Belgian method of spontaneous fermentation. Hot, unfermented wort is cooled overnight using outside air temperature in a traditional, large shallow pan known as a “coolship.” During the cooling process, naturally occurring microflora from the air inoculates the beer, and in the morning, it is transferred into French oak wine barrels where the entire fermentation and aging (over 1-3 years) takes place.
Experimentation has always been a huge part of our culture at Allagash, and our limited and specialty releases reflect our passion for using the entire brewing palette to create unique beers.
