Whiskey Barrel-Aged Coolship Resurgam
Using a traditional Belgian brewing process, we fermented this beer with wild yeast and microbiota found in the air around our brewery. We then blended together multiple ages of spontaneous beer, and aged that entire blend in rye and whiskey barrels from our friends (and neighbors) at New England Distilling. This additional four-month aging process lends distinct overtones of whiskey and a hint of spice to the signature notes of tart stone fruit and light funkiness found in our Coolship beer.
