Florette

Florette pours a light red color thanks to the hibiscus petals we add in the whirlpool. On top of color, the petals add a subtle undercurrent of tartness to balance the beer’s hop-derived citrus and tropical fruit notes. Local honey and Belgian-style yeast add the final layer of fruit-forward esters, making for an end result that’s both elegant and extremely drinkable.

Putting Waste to Good Use

In between every stack of 750 mL glass bottles is a hard sheet of blue plastic. As soon as it’s pulled from between those layers, this blue sheet becomes waste (to us as a brewery). Unless, that is, we find someone else who has a good use for that big sheet.

What is: a saison

A saison, also often called a farmhouse ale, is a style of beer originating in the French-speaking Wallonia region of Belgium. In today’s brewing scene, it is widely accepted that a saison will be “exceptionally dry, highly carbonated, fruity and of moderate strength: 6-8% ABV.” Beyond that description, the saison style offers quite a bit of room for interpretation.
